Ingredients
2 medium-sized zucchini
1 1⁄4 cups vegetable oil
2 cups sugar
4 eggs (or substitute 1 egg with 1⁄4 cup applesauce for a vegan version)
1 tablespoon pure vanilla extract
3 cups flour
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
Directions
Preheat the oven to 350°F (175°C).
Grate the zucchini using a food processor or a grater. Place the grated zucchini on a kitchen towel and rinse it to remove excess water since zucchini contains a high water content.
In a large bowl, combine the vegetable oil, sugar, eggs (or applesauce substitute), and pure vanilla extract.
In a separate bowl, mix the flour, ground cinnamon, baking powder, baking soda, and salt.
Slowly add the dry ingredient mixture to the larger bowl with the wet ingredients, and mix well until combined.
Grease a baking dish or loaf pan, and pour the batter into it.
Bake at 350°F (175°C) for 40-60 minutes, depending on the size of the dish, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let it cool before slicing and serving.
